An authentic taqueria to the true sense of the word, T/ACO combines traditional Mexican fare with its own unique, eclectic spin. With fresh ingredients and a menu that would make even the pickiest eaters swoon, this Boulder staple has built a cult-like following both with university students and surrounding communities. Opened in May 2012, T/ACO has seen quite a rise in the ranks, and is quickly garnering fans in these parts. Great food, an awesome drink menu, and a killer atmosphere make this restaurant the perfect place to kick back with friends. The food’s so good that T/ACO’s masterful creations even made Thrillist.
The Food
T/ACO is dedicated to creating authentic Mexican street food, while using only the freshest ingredients. Welcome to Boulder-Mex, Colorado’s hottest new cuisine. The winning combination of as many locally-sourced ingredients as possible, with the appeal of street-style’s down-home flare creates an unforgettable eating experience.
The chips and salsa are awesome – a little bit oily, right amount of salt, just perfect. Follow that up with any number of their incredible tacos. The duck and fish are my favorites, and their chipotle mayo is a can’t-miss. The mushroom taco is absolutely divine as well, and there’s no shortage of other options to choose from, so come hungry and leave happy.
The Environment
As you walk in, you immediately realize that this place is special. There’s a large, welcome window at the front that lets you take a peek at the distinct wooden boards from floor to ceiling. They create the perfect backdrop for life-size charcoal paintings of farmers working in the fields and other authentic scenes from Mexico’s past. From start to finish, you’re immersed in a microcosm of Mexican culture and cuisine, with a really cool Americana spin to it. Modern adornments and neat conversation pieces create a juxtaposition of old-world styling mixed with contemporary pieces that really capture the essence of Boulder.
The Experience
On top of the great food and fun atmosphere, one of my favorite things about this restaurant is how the staff there really cares about customer satisfaction. Peter Waters (the managing partner) takes pride in kicking up conversations with his patrons, and creating a really laid back, casual atmosphere. There are customers from all ages and backgrounds – a sign that there’s mass appeal for the location. They have a locally loved vibe and the wait staff tries really hard to make each person feel special (for example, the server drew a heart on our receipt…super sweet). My main critiques of T/ACO are that the music was a bit loud for the lunchtime rush, our server missed a couple of items we ordered, and we had to wait a little too long to get refills on our waters.
If you want to experience a good meal in a fun, inviting setting, T/ACO is the place to go. From the unique décor, to the phenomenal food, I’ve got a feeling you’ll be coming back for más. This place is definitely becoming engrained in Boulder’s culture, and will be a mainstay for many years to come.
