
Since 2011, Verde Food Truck has been serving up delicious Sonoran style Mexican food, with an emphasis on simple but hearty burritos, to satisfied Boulder customers. Just last fall, the popular food truck expanded its business by opening Verde restaurant at 3070 28th Street, north of Valmont Road. Now, Boulder residents can enjoy Verde’s unique Arizona-style Mexican cuisine while seated and sipping on a margarita.
Verde Food Truck focuses on simple, homemade burritos and tacos, but the restaurant offers a larger menu and a full bar. Inside the minimalistic and bright space, you’ll enjoy a dining experience that’s unlike other Boulder Mexican spots. Verde’s menu highlights the simple and fresh ingredient approach to Sonoran style Mexican food, which is popular in Arizona and differs from our Colorado Mexican cuisine.
You won’t find the traditional Colorado style big, stuffed burrito at Verde’s restaurant or food truck. Instead, their burritos are meat and veggie heavy, and light on the rice and beans filler, like the California burrito that comes with carne asada, home-style potatoes, cheese, and guacamole. Tacos are also straightforward, with a variety of meat choices as well as a grilled veggie option that’s topped with Verde’s red sauce “smullsa.”

At the brick and mortar Verde, in addition to burritos and tacos, you can also order entrees like the fresh corn tortilla Enchiladas with your choice of machaca, carnitas, chicken, or grilled veggies. Verde offers a vegetarian Avocado Black Bean salad, which comes with mixed greens, avocado, black beans, corn, cherry tomatoes, fried corn tortilla chips, and red pepper vinaigrette.
The restaurant’s affordable eats get even better during happy hour. From 3-6pm daily, you can enjoy appetizer deals like $8 nachos, $4 bottomless chips & salsa, and $5 Mexican street corn—a spicy grilled corn on the cob that’s seasoned with habanero-infused butter and topped with cotija cheese and roasted garlic jalapeno crema. But the most popular appetizer item is the Sonoran Dog Sliders, a distinct dish of 3 beef hot dogs topped with pinto beans, bacon, Pico de Gallo, and roasted garlic jalapeno crema, all served in torta buns. Verde’s sliders are just $6 during happy hour.

Besides an extended food menu, another reason to visit Verde’s restaurant is the full bar. Signature drinks include a House Margarita, Mojito, and the Selena, a Blanco tequila-based drink with lime, cucumber, and seasonal shrub. Happy hour drink specials are served daily from 11-6pm and include $5 wines and cocktails like Bloody Mary’s and Mimosas, or $6.75 Microbrew pitchers like Odell’s IPA or Upslope’s Verde Craft Lager—a Mexican style pale lager crafted especially for the restaurant.
